The Smoke of Bamboo: Cold-Smoking Tea at Midnight in Golaghat

Listen to Terroir Field Soundscape: Midnight Bamboo Embers & Rain
0:00 / 0:48

When the moon rises over the Golaghat forest boundary, the air turns cool and heavy with river mist. Inside Dhiren’s open timber curing pavilion, the embers of seasoned wild bamboo and aged oak have died down to a pale crimson glow.

This is where the transformation happens. Unlike industrial lapsang souchong, which is subjected to fierce, high-temperature pine smoke that blisters the leaf, Dhiren’s technique is one of slow, cool absorption. The withered whole leaves sit on bamboo racks two meters above the coals for eighteen unbroken hours.

The smoke doesn’t burn the leaf; it marinates it. As the cool dawn air sweeps in from Kaziranga, the leaves condense the delicate volatile oils of resinous smoke into their cellular walls.

Tasted in Cardiff weeks later, the liquor pours a deep, radiant amber. The first sip reveals pine needles and damp earth, immediately softening into clover honey, roasted chicory, and the unforgettable stillness of an Assam forest at midnight.
